What you'll need

  • 2 cans low-sodium black-eyed peas, rinsed
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup lower-sodium broth
  • Smoked paprika, thyme, black pepper, and bay leaf
  • Optional: a small amount of smoked turkey

How to make it

  1. Sauté onion until soft, then add garlic and spices.
  2. Add peas, broth, bay leaf, and optional smoked turkey; simmer gently for 20 minutes.
  3. Remove bay leaf and finish with a splash of vinegar or hot sauce if you enjoy it.
