What you'll need
- 1 large can salmon, drained and picked through as you prefer
- ⅓ cup almond flour, plus a little more if the mixture feels loose
- ½ cup finely diced onion, bell pepper, and celery — the holy trinity
- 1 egg
- Garlic powder, onion powder, black pepper, paprika, and a pinch of cayenne
- Olive oil for the skillet
- Lemon wedges, optional
How to make it
- Flake the salmon into a bowl and gently mix in almond flour, the holy trinity, egg, and your seasonings. Let the mixture rest for a few minutes so the almond flour can do its work.
- Shape into small patties. If they feel soft, add almond flour one tablespoon at a time until they hold together.
- Warm a thin layer of olive oil in a skillet over medium-low heat. Pan-fry the croquettes slowly until both sides are deeply golden and warm through, turning carefully once.
