Chicken & Okra Gumbo

What you'll need

  • 1 tablespoon olive oil
  • 2 tablespoons flour
  • Onion, celery, and bell pepper
  • 2 cups sliced okra
  • 1 pound cooked chicken breast or thighs
  • 4 cups lower-sodium chicken broth
  • Garlic, thyme, bay leaf, paprika, and filé powder

How to make it

  1. Make a light roux with oil and flour, stirring until it turns the color of peanut butter.
  2. Add the trinity, okra, garlic, and seasonings; cook until softened.
  3. Add broth and chicken, then simmer 25 minutes. Serve with a small scoop of rice if desired.
