Crispy Oven-Baked Catfish

What you'll need

  • Catfish fillets
  • ½ cup cornmeal
  • 2 tablespoons whole-wheat flour
  • Paprika, garlic powder, onion powder, and black pepper
  • Buttermilk or plain yogurt thinned with milk
  • Olive oil spray
  • Lemon wedges

How to make it

  1. Heat oven to 425°F and line a baking sheet.
  2. Dip catfish in buttermilk, then coat lightly with seasoned cornmeal mixture.
  3. Mist with oil and bake until crisp at the edges and the fish flakes easily. Serve with lemon.

Why we made it healthier

Baking gives the cornmeal crust its crispness with much less added oil than deep frying.
